One of the most underrated vegetables, at least in my opinion, is sweet potatoes. Most people think of carrots when they want a veggie high in beta-carotene, but in reality, sweet potatoes are even better. You can’t make chips from sweet potatoes, as you can make crispy fries from regular potatoes, but they are an excellent side dish to any meal.
Sweet potatoes are inexpensive and available at any grocery store. Aside from beta-carotene, sweet potatoes are high in vitamin B6, vitamin C, and vitamin D. Regular consumption of sweet potatoes helps you regulate your blood sugar levels, the key to preventing diabetes. They also provide numerous other health benefits, including lowering your risk of heart attack, boosting your immune system, and preventing the harmful effects of free radicals.
Be sure to purchase sweet potatoes that don’t have holes, bruises, cracks, or soft spots. Look for firm sweet potatoes that have not been kept in refrigerated areas. And once you buy them, don’t store the potatoes in the fridge, as the cold temperature may affect their taste.
That being said, here is one juice that I recommend to help you consume more sweet potatoes. If you have difficulty incorporating them in your regular diet as side dish, this juice will do the trick.
- 2 sweet potatoes
- 4 ribs of celery
- 2 carrots
- 1 jicama
- Place all the ingredients (except the cinnamon) in a blender or juicer. Note: If you’re using a juicer, you don’t need to add water.
- Once the drink is smooth enough, add a pinch of cinnamon.
You can drink the juice any time of the day.
